Avocado Toast Inspiration
Avocado toast has become quite popular lately. I was inspired by the one I had at Edison's in Stratford, Ontario. Edison's is a beautifully appointed little inn with a cafe bar on Stratford's downtown main street.
I travel a little over an hour to have my hair cut in Stratford once every six to eight weeks. Stratford is a pretty town with a river that runs along by its famous theatre. It's blessed with a variety of great restaurants and shops.
My husband suggested that he book a day off work and go to Stratford with me for one of my appointments, so we could enjoy the city together. It seemed that by April, the weather should be nice enough for such an outing. Of course, this was the year that winter in Southwestern Ontario just didn't want to go away! The weather turned out to be a nasty mix of cold wind and wet snow. However, the plan was in place and the day was booked off from work, so we proceeded.
While the weather wasn't conducive to romantic walks along the river, we did get in some great shopping! We also discovered Edison's! A couple of the young ladies in my hair salon recommended it for lunch. That's where I had this gluten free avocado toast with poached egg. As I recall, they also offered smoked salmon and various other options for topping the avocado toast. We enjoyed the cafe so much that we returned later in the afternoon after some shopping for coffee!
Avocado Toast
Since returning home from that memorable day, I've been making my own avocado toast with my Gluten Free Sandwich Bread, a perfectly ripened avocado, poached egg, and the Everything Seasoning that I love so much on roasted vegetables.

I shot this video and these photos before I knew there was a better way to poach eggs. The Avocado Toast tastes just as good, but if you check out my previous post, How to Poach an Egg, the egg is much nicer looking.
How Do You Know When an Avocado is Ripe?
I avoid buying ripe avocados in the store unless I absolutely must have one that very day. In my experience, a ripe avocado will have become bruised and black inside by the time I get it home and open it up. So, I choose my avocados a little on the green side. (They'll keep well for quite some time in a plastic bag in the crisper drawer of the refrigerator.) Then, I set one or two of them out on the counter at a time to finish ripening up. Depending on how green they were when they started, they'll be ready to eat in a day or two.
A ripe avocado will give a little to gentle pressure exerted on the end. Be careful, though, because if you're not using it right away, this little test will have caused a bruise. If the avocado still feels hard, don't even try to use it! It will not be worthwhile. Save it for a later day.

Recipe
Gluten Free Avocado Toast with Poached Egg
Ingredients
- 2 slices Gluten Free Sandwich Bread
- 1 avocado mashed
- 2 poached eggs
- 1 teaspoon Gluten Free Everything Seasoning
Instructions
- Toast bread until lightly browned.
- Cut avocado open. Remove pit. Scoop out the inside and mash it.
- Poach the eggs according to How to Poach an Egg instructions.
- Assemble: Spread mashed avocado over toast. Top each slice with a poached egg. Sprinkle Everything Seasoning over all and serve.
