This is just the sort of dish that I prepare in our travel trailer when we go to visit our kids and their families. Don’t you love it when you can cook up an entire dinner in one pot! The recipe is made extra-easy with the addition of gluten free Spice Mix. If you keep some of it mixed up on hand, there are many different dishes it can enhance. Coat a beef roast or steaks before cooking for an amazing flavour punch!
Although I enjoy eating out in restaurants that prepare real food from scratch and can accommodate my dietary restrictions, I also like to be able to prepare our own food in the trailer when we travel. I keep patio dishes, my older set of pots and pans, and basic kitchen gadgets handy in the trailer year round.
Time Saving Spice Mix
However, we need to keep our spices fresh. I don’t want to leave seldom used ones sitting in the cupboard growing stale. It would be a pain to haul out a dozen or more spices every time we pack the trailer for a trip or a weekend away. The solution is this pre-blended Spice Mix.
Sweet Potato
Sweet potatoes contain carotenoids. A study done by the University of Georgia shows a possible link between consuming carotenoids and improved brain function in older adults. As someone who has spent several years dealing with aging parents, let me encourage you to do whatever you can to protect your cognitive health.
Bone Broth
This Ground Beef Skillet with Sweet Potato and Kale also uses a little bone broth. Bone broth is so good for you! I have a very simple way of making it. You can read my method here. I try to consume as much of it as I can, but good intentions sometimes fall by the wayside. Recently, I’ve been just heating up a cup of broth to drink first thing each morning. That seems to be the easiest way to make sure I get some everyday.
Using your own homemade bone broth that’s been simmering for hours not only adds nutritional value to your dishes, but also increases flavour without adding excessive saltiness.

Ground Beef Skillet with Sweet Potatoes and Kale

Ingredients
- 1 tablespoon avocado oil
- 2 cloves garlic minced
- 1 medium yellow cooking onion chopped
- 1 pound ground beef
- 1 tablespoon Cathy's Gluten Free Spice Mix
- 4 mushrooms sliced
- 2 large sweet potatoes about 1 ½ pounds, sliced
- ¼ cup bone broth
- 4 cups kale chopped, large stems removed
- 1 medium avocado for serving
Instructions
- Heat avocado oil in a skillet over medium-high heat. Saute garlic and onion until translucent.
- Add ground beef and brown.
- Stir in spice mix, mushrooms, sweet potatoes, and broth.
- Cover, reduce heat and simmer until sweet potatoes are soft.
- Stir in kale. Heat through. Serve warm with sliced avocado on the side.

Notes
- Save time by preparing sweet potatoes and then kale while the onions and meat are cooking.
- Although broth will contribute flavor, you could replace it with water if you don't have any.
- Spinach is a good substitute for kale in this recipe.
