While people rave about my Vegan Mashed Potatoes with Olive Oil and Roasted Garlic, I often find myself taking this shortcut with garlic powder. Cooking everything together in the Instant Pot rather than adding ingredients later simplifies the whole process.
Ingredients
- Potatoes - Russet potatoes are recommended for making mashed potatoes, but in reality, I've used whatever I have on hand! Peel them or not, depending on your preference.
- Milk - Any of the nondairy milks that come in a carton should work here. Almond and cashew are our favorites. Don't use regular dairy cows' milk in this recipe, as it can burn to the bottom and cause your Instant Pot to stop.
- Garlic - Yes, there is a difference in taste between roasted garlic in the original recipe and garlic powder, which I use here, but honestly, this one is just easier!

Instructions
Add all of the ingredients to the pressure cooker in the order given in the recipe.
Close the vent and set your Instant Pot to cook for 10 minutes on high pressure.
Allow the pressure to release naturally, without touching the appliance, for at least 10 minutes.
Mash the potatoes with a masher or use an electric mixer for very smooth, creamy mashed potatoes.
Hint: If you avoid opening the pressure valve for up to an hour, until you're ready to mash and serve the potatoes, they will keep hot until you're ready for them. Just let the pressure release naturally.

I like that I can start this well in advance of serving a meal, knowing it will be ready when I am. Since this recipe cooks on its own without any attention needed until the end, you can focus on your guests or the other dishes you're preparing.

I have not tried to make this on the stovetop. I think the liquid would boil up and evaporate too much.

Store any leftovers in a sealed container in the refrigerator for two or three days.

Leftovers
I love having leftover mashed potatoes! To reheat them, place a heavy cast-iron skillet over medium-high heat and melt a big chunk of butter in it. A quarter cup for two servings is amazing! Dump in the mashed potatoes and allow them to fry undisturbed until they begin to brown on the bottom. Turn them over to brown a little on the other side, and enjoy! Keep an eye on the temperature, so they don't burn.
I use regular dairy butter and have not tried this with nondairy butter. I think it would be pretty good with olive oil, too.
