Honey Ginger Lemonade with Mint

This easy ginger lemonade recipe comes together quickly without any cooking or heating! It makes a cool, refreshing drink with freshly squeezed lemons and is naturally sweetened with raw honey. You can feel good about serving from-scratch lemonade with ginger and mint.

There are two cold drinks I like to keep on hand during the summer months. Both have health benefits and can be enjoyed guilt-free. One is Iced Lemon Tea, and the other is this Fresh Lemonade. When we used to go away with the RV, I often made one or both of them before we left home and took them with us in jars in the fridge.

Because I don't like to consume or serve sugary drinks, for the most part, I just drink filtered water at home and on the road.  However, there are times when you want a delicious, cold beverage on the patio! After searching and experimenting for years, I've landed on these two. They hit the spot!

Gather Your Ingredients for Homemade Honey Lemonade

  • Lemons - Freshly squeezed lemon juice makes the best lemonade!
  • Mint - fresh
  • Honey - Raw honey is preferable for the health benefits, but any honey will work.
  • Ginger root - fresh

How to Make This Recipe for Honey Lemonade in 5 Steps

Learn how to make lemonade without sugar. This is a great lemonade recipe for kids! Here are the simple steps to making freshly squeezed lemonade with honey.

1. Stir honey into water.

2. Chop ginger and mint.

3. Press ginger and mint into lemon juice.

4. Mix the lemon juice mixture with the honey and water.

5. Strain your freshly squeezed lemonade into a pitcher.

Serve over ice.

Storage Tips

Store leftover homemade lemonade in the refrigerator in a glass container for a day or two.

Variations for Sweetness

I like my lemonade tart. If your "just enough" sweetness is different from mine, simply adjust the amount of raw honey in this recipe accordingly.

How many lemons for 1 cup of juice?

You'll need 4 -6 lemons for 1 cup of juice, depending on the size of the lemons. My lemons were rather small the last time I made this, and 6 were enough.

What can I use instead of sugar in lemonade?

You could sweeten lemonade with maple syrup or stevia, but I think that the flavor of raw honey complements the lemon best.

How to Make a 2 Quart Lemonade Recipe

This recipe makes a little more than one quart. To make two quarts, simply click on the number "6" in the recipe header where it tells you that the servings are 6 glasses. Move the little slider that pops up until it says "12," and you've doubled the recipe!

  • 1 citrus juicer
  • 1 sieve

Ingredients

  • 4 cups water
  • ½ cup raw honey
  • 1 cup freshly squeezed lemon juice 4 - 6 lemons
  • 1 1-inch knob fresh ginger chopped and pressed
  • 1 sprig fresh mint chopped
  • more fresh mint for garnish
  • ice for serving

Instructions

  • Stir honey into water to dissolve.
    4 cups water
    ½ cup raw honey
  • Press the ginger and mint into the lemon juice, making sure they have been well pressed to release their juices.
    1 cup freshly squeezed lemon juice
    1 1-inch knob fresh ginger
    1 sprig fresh mint
  • Stir this lemon juice mixture into the honey and water.
  • Strain the lemonade.
  • Serve over plenty of ice, and garnish with fresh mint.

Notes

  1. Don't worry about picking out seeds as you squeeze the lemon juice. Your lemonade will eventually be strained anyway.
  2. If you'd rather skip the stirring of honey into water and the straining of your lemonade, use about ½ as much ginger, and make this in a blender. If you choose to go this route, you will need to pick out the seeds as you squeeze the lemons.

    Ok, so first of all t his lemonade is HAPPENING! It is smokin' hot in Vancouver and this will be the best cool down drink. 🙂 Secondly, love the look of the site! Has it changed recently? I feel like it's a lot different.It is beautiful and the photos look fantastic.
