Press the ginger and mint into the lemon juice, making sure they have been well pressed to release their juices.
Stir this lemon juice mixture into the honey and water.
Strain the lemonade.
Serve over ice, and garnish with fresh mint.

Don't worry about picking out seeds as you squeeze the lemon juice. Your lemonade will eventually be strained anyway.
If you'd rather skip the stirring of honey into water and the straining of your lemonade, use about ½ as much ginger, and make this in a blender. If you choose to go this route, you will need to pick out the seeds as you squeeze the lemons.
