Mix them with the first amount of shredded coconut. Stir in coconut milk and honey.
2 cups unsweetened shredded coconut, ½ cup thick, full-fat canned coconut milk, 2 tablespoons raw honey
Scoop the mixture, press it into small balls, and roll each one in the second amount of coconut. (They will be very soft at this point.)
1 cup additional unsweetened shredded coconut
As you shape the balls, set them onto a place or tray. Store them in the refrigerator for an hour to firm up before serving.
Notes
The dough will be very soft as you press the balls into shape. Rolling in lots of extra shredded coconut helps with the stickiness. They will firm up as they chill in the refrigerator.
