Combine the flours, cinnamon, and salt in the bowl of a food processor.
Add the egg, honey, and butter. Process until it sticks together and forms a ball.
Roll out the dough between two layers of oiled parchment paper until it's about ⅛" thick. (You can oil each parchment on the side that will be in contact with the dough by rubbing the excess butter from an empty butter wrapper against it. Otherwise, use a few drops of avocado oil or a little extra butter and rub it between the two layers.)
After rolling out the dough, peel off the top layer of parchment paper.
Bake on middle rack of preheated oven for 10 minutes.
Remove from oven. Reduce oven temperature to 300° F. Cut the dough into squares or rectangles for crackers with a pizza cutter. Poke lots of holes in them with a fork. Turn them over and return to oven to bake for another 10 minutes, or until they are nicely browned on both sides.
Notes
Watch your crackers closely as they bake. Any difference in thickness or oven temperature could result in an overdone or underdone product.
