Put approximately 1 cup water (240 ml) in the bowl of the Instant Pot. Set the trivet in place.
Arrange whole, scrubbed beets in the trivet.
For medium beets, 2¼" to 2½" (5.7 to 6.4 cm) in diameter, set Instant Pot to cook at high pressure for 25 minutes. Then allow for 10 minutes of naturally releasing pressure.
When the beets are cool enough to handle, cut the ends off and peel them. The skins should come off easily now that they have been cooked. Slice them as you wish, to serve.
Notes
You can actually follow this recipe for any number of beets.
The size of the beets will alter the cooking time.
1-½ " (2.5 - 3.8 cm) diameter beets will cook in about 15 minutes.
2" (5 cm) diameter beets will cook in about 20 minutes.
If the beets are large, cut them in half before cooking.
