Grease an 8-inch by 8-inch (20 cm by 20 cm) pyrex cake pan with coconut oil.
Preheat the oven to 350°F (177°C).
In a large bowl, whisk together the dry ingredients except for raisins.
In a medium bowl, whisk the eggs. Whisk in the applesauce, coconut oil, and vanilla.
Stir wet ingredients into the dry. Then stir in the raisins.
Pour batter into prepared pan, and bake for 50 to 55 minutes.
Test for doneness by poking the cake with a fork or toothpick near the centre. If it comes out clean or brings cooked crumbs with it, the cake is done.
Notes
For best results, bring all ingredients to room temperature before proceeding to make your cake.
