1 ½cupunsweetened coconut milkfrom a carton, divided
2pouches gelatine powder(enough to set 4 cups (500mL) liquid
½cupboiling water
1 400mL13.5 oz can full fat coconut milk
8soft datespitted
¼cupcoconut butter
1vanilla beanscraped
Instructions
Sprinkle gelatine powder over ½ cup coconut milk from carton. Add ½ cup boiling water and stir constantly until dissolved.
Add remaining 1 cup coconut milk from carton, coconut milk from can, dates, coconut butter, and vanilla scrapings to high speed blender. Puree until smooth. Chill in refrigerator for an hour.
Following manufacturer's instructions, pour the mixture from blender into chilled ice cream machine bowl and process until it firms up, about ½ hour.
Enjoy the ice cream right away or freeze for later.
